El arroz es parte
importante de la dieta de millones de ciudadanos del mundo. De ahí la
importancia de establecer vigilancia sobre su calidad. Esto, a propósito de una publicación reciente de Consumer Reports (Arsenic in your food) que presenta los
resultados de análisis de arsénico realizados a más de 200 muestras de arroz blanco e integral y a
productos derivados del arroz (como Rice Krispies de Kellogs), consumidos en Estados Unidos.
No en todos los productos se encontraron
niveles “preocupantes”, pero algunos resultados sí son resaltados en rojo,
sobre todo en arroces cultivados en el sur de ese país. También se concluyó que
los niveles de arsénico en el arroz integral (que el suscrito consume) eran más
altos que los detectados en arroz blanco; parece que la pulida del mismo
elimina parcialmente el arsénico. Sin embargo, el integral tiene más vitaminas
y minerales. De ahí la importancia de estar bien informado en el momento de
seleccionar productos.El arsénico se
encuentra naturalmente en aguas y suelos, pero su concentración puede
multiplicarse por restos de agroquímicos
o residuos industriales y mineros.
También se evaluaron muestras de 3633
personas. Las conclusiones: las personas que consumían arroz una vez al día tenían
en promedio un 44 % más de arsénico que las que no lo consumían. En aquellas
que consumían dos veces diarias, la
diferencia sube hasta un 70%. En respuesta al artículo de Consumer
Report, la Administración de Drogas y Alimentos de Estados Unidos (FDA) emprendió una evaluación de 1200 muestras de
los mismos productos de arroz, los resultados se conocerán a finales de 2012.
La FDA también considera establecer normas de calidad para el arsénico en jugos de
manzana, tema al que se había referido Consumer Report en enero pasado.
El arsénico ha sido relacionado con el cáncer
y otras enfermedades. Los más vulnerables: niños y bebés. Mientras se conocen
los resultados finales, la FDA recomienda un menú variado y
limitar el consumo excesivo del cereal. Y a los agricultores e industriales,
comprometerse con la “producción
